Chocolate Walnut Ice Cream

I know I have been making a lot of recipes that involve cocoa lately, and it’s mainly because I got a huge bag of Anthony’s Goods Cocoa Powder and I need to run to the store to get my usual ingredients for meal prepping for the week.

The other day I had a few left overs, including some cooked   quinoa, some close-to-overripe bananas, some almond milk and maple syrup. I did not know what to eat for breakfast so I attempted to make some quinoa/oatmeal pancakes but they unfortunately did not cook in the inside very well, so I decided to make something crazier, and a bit more delightful: ice cream.

CHOCOLATE WALNUT ICE CREAM

I decided to adventure myself into trying making ice cream with…COOKED QUINOA!

The final result was very rich and creamy, just like normal chocolate ice cream would be. You can definitely add more syrup if you wish, or other sweetener, if you want it to be sweeter. The walnuts add a nice kick to the overall flavor too; it’s safe to say you can add walnuts to anything from a salad to ice cream and the flavor only gets better.

Ingredients

1 cup dry oatmeal
1/3 cup maple syrup
¾ cup cooked quinoa
3 frozen bananas
2 tablespoons Cocoa Powder
1 tsp. vanilla flavor
½ cup almond milk
Handful of walnuts (to be added once ice cream is ready to be frozen)

Instructions

  1. Blend all ingredients (except for walnuts) in a high speed blender
  2. Pour mixture in a bowl and add walnuts (as many as you wish) and you mix very well
  3. Place bowl in the freezer.
