Oatmeal Bread with Zucchini, Banana and Chocolate Chips
Veggies are becoming cool nowadays. Zucchini has now joined the conversation with the cool vegetables along with potatoes and pasta (shh! pasta IS a vegetable ?) and now cool recipes such as the one I’m about to present to you have melted our hearts inside out.
This yummy bread is made with zucchini, banana AND chocolate chips. I know that combination might sound slightly weird but in reality this bread tastes just like your local Parisian bakery’s freshly made bread. It’s fluffy, warm and more than flavorful!
Oatmeal is extremely good for you. It has a lot of fiber, therefore it helps you stay full for several hours.
It’s also a very versatile food; you can easily make pancakes with it, or bread, or turn it into a raw vegan dish by soaking them overnight in water or plant milk.
Today, I will be sharing with you a recipe that I adapted from chocolatecoveredkatie.com. I love this particular recipe because the final result does not have any gluten, or heavy ingredients that will make your digestive system work too hard. It will be easily digested since the composition is nothing but oats and plant-based milk.
The chocolate chips that I used are 100% cacao, no sugar added to them.

- Turn oven to 350 F degrees.
- Put oats in blender. Blend very well until a fine powder has formed.
- In the blender (with the oats already turned into flour), add the rest of the ingredients (except the chocolate chips) and blend on high.
- Instead of “greasing” your baking dish with oil, lightly spread some mashed banana on the dish and that will keep the bread from sticking to the dish.
- Add chocolate chips to the batter, mix, then pour batter on baking dish.
- Bake for 25 minutes.
