Vegan Grilled Cheese Sandwich with Tomato Soup

Hello everyone! I have not posted on the blog for a while. My life has changed quite a bit from the last time I shared my whereabouts but I’m ready to stay a bit more active on this platform. My family moved to a whole other country in the middle of COVID-19. To tell you the truth, ever since I knew about my mom’s plans to settle in another country, I have felt down and even depressed for months. Despite this, now that they’re officially safe and out there and their quarantine period is over, I am feeling much more positive. I started school not long ago, I want to work towards a degree in Nutritional Science since I am still very passionate about food and helping people (and myself) to eat better every day. I am also working full time at Home Depot so I have kept myself pretty busy. Anyways, that was just a short update on my life.

Today, I would like to share with you the best and most scrumptious grilled cheese sandwich I have ever had. It has two kinds of vegan cheese, vegan deli slices AND vegan bacon. And that’s not even the best part: It is accompanied with a delicious tomato soup! Honestly, this tomato soup kind of reminded me of the red sauce that’s used for pupusas. It’s super rich and will make you feel like you are at a restaurant as soon as you try it along this yummy grilled cheese sandwich!

Vegan Grilled Cheese + Tomato Soup

I would like to introduce to you a quick, easy Monday night dish that everyone in your family will love. It's GRILLED CHEESE and the best part is that it's vegan. I normally don't like relying too heavily on vegan meat and cheese replacers but this time I had to do an exception: you simply cannot skip trying this grilled cheese at least once in your lifetime.

Sandwich

  • 8 slices Food for Life 7 Sprouted Grains
  • 4 pieces Sweet Earth Vegan Bacon
  • 8 slices Violife Provolone (any brand of vegan cheese in slices)
  • 8 slices Mikoyo's Vegan Mozarella
  • 8 slices Tofurky Deli Slices

Tomato Soup

  • 1 tsp olive oil
  • 1 tbsp chopped garlic
  • 2 tbsp onion
  • 1 can diced tomatoes (14 ounces)
  • 1 cup vegetable broth
  • 1 cup water (or as needed depending on desired soup thickness)
  • 1 tsp salt (or to taste)
  • 1 tsp pepper (or to taste)
  • 1 tbsp nutritional yeast ((optional))

Sandwich

  1. Scoop the vegan Miyoko's Mozarella onto the bread slices and spread it throughout the bread surface

  2. On the grill pan on medium low heat, place the bread slices with the mozarella.

  3. Add bacon on top of mozarella.

  4. Add Tofurky vegan deli slices

  5. Add square slices of Violife provolone or any other kind of square sliced vegan cheese

  6. Turn oven on Broil at 500 degrees F

  7. With all cheese slices facing up, place bread slices inside oven and broil for 5-10 minutes or until cheese is melted

  8. Once cheese is melted, join all bread slices and press together so melted cheese sticks out of your sandwich

  9. Cut in half diagonally

Tomato Soup

  1. On a saucepan on medium heat, add some olive oil and warm up

  2. Add garlic and onion and cook for a minute or until onion is translucent

  3. Add diced tomato and cook for a few minutes

  4. Add vegetable broth and water (as needed)

  5. Add salt and pepper, then bring contents to a boil

  6. Pour all saucepan contents into blender

  7. Add nutritional yeast

  8. Blend really well for about a minute. Then pour contents back into saucepan

  9. Cook for a few minutes on slow or until it becomes the desired thickness

Uhhh spanky, you seems to be missing the part where Dem leaders of cities that allowed protest are also having a rise in cases tied to the protests. Maggi Gunner Carla
