Quinoa Sushi

by Laura

When I used to eat regular sushi, I always got a headache and a slight stomachache. I kept telling myself that it was normal since I had eaten a lot.  I also thought that the taste definitely made up for whatever discomfort I got afterwards.

In order to improve our health, and therefore live longer and much happier, we need to accept the fact that it’s not normal to get headaches, bloating, acid reflux, stomachaches, loss of energy, sleepiness or overall discomfort after we’re done eating. All these symptoms are usually the result of eating foods that our bodies simply don’t like. Because of the chemicals that are added into our food by large companies with the purpose of making food EXTREMELY ADDICTIVE , our taste buds have become corrupted. Chemicals such as MSG (Monosodium glutamate) and sugar are put in our food to trick our brains into thinking that we really need to have more of a certain food in order to be happy. Why is Mac & Cheese so addictive? Why are sugar and bread so addictive, but vegetables aren’t? Have you seen a mouse falling into a mouse trap? I haven’t either, but I have witnessed how we all fall into this trap (set by large greedy corporations) of becoming addicts to unhealthy food over and over again.

When you start adding wholesome foods into your daily living, you will start noticing that your body tries to “talk” to you, and it will do so by showing symptoms of discomfort or you will feel great and will have tons of energy. Any signs of headaches, bloating, acid reflux, stomachaches, loss of energy, sleepiness or overall discomfort are not normal.  You will notice that when you start eliminating foods that cause inflammation (dairy, meats, sugar) and bloating, and you start eating foods high in fiber and nutrients, you will see how your body will no longer feel any of those symptoms mentioned above. Our bodies are a lot wiser than we are. Our bodies KNOW how to heal themselves. If it’s not healing itself, then the only person who’s keeping it from doing so is nobody but yourself. I know sushi is a comfort food for a vast majority. Sushi was originally meant to be healthy, filling and delicious, not greasy (I’m looking at you fried rolls) and definitely not meant to make you feel sick.

How is sushi unhealthy though? It only has rice and raw fish!

Nowadays, sugar, oil and extra salt are added just to the rice alone! And most likely that raw fish came from a fish farm, where they add loads of antibiotics and pesticides! Definitely gross.  But don’t worry, you can still have sushi!

My favorite version of sushi nowadays is no longer the California roll, or Yum Yum roll. Now, I get to enjoy the flavor of a bunch of nutritious foods packed into one roll. Scroll down to get the recipe!

  2. Sheets of nori (sushi paper)
  3. Cucumber (cut lengthwise, then in thin strips)
  4. Cooked sweet potato (cut lengthwise)
  5. Sliced Avocado
  6. Carrot (cut lengthwise, then in thin strips)
Instructions
  1. Place your sushi mat on a flat surface.
  2. Put seaweed sheet on top of sushi mat.
  3. Add quinoa, then spread it out evenly. Leave ONE INCH uncovered at the end of the seaweed sheet.
  4. Add one strip of cucumber, a strip of carrot, your sweet potato, and lastly the avocado.
  5. Start rolling the seaweed sheet making sure all the items stay inside, as shown in the picture and videos below. Sometimes I add lemon juice to the end of the seaweed sheet to make sure it sticks to itself once I’m done making the roll.
