Berry Vegan Ice Cream

I enjoy ice cream even during winter time. When I first became vegan, it got hard for a second to enjoy ice cream since I was not able to find the right product to make my ice cream smooth and creamy, so I gave up on it for the longest time. However, the secret is out, and it is called coconut cream

COCONUT CREAM, as it may seem obvious, is very creamy and gives anything you mix it with a very smooth and thick texture. I even enjoy eating the coconut cream by itself!  You definitely have to try it; there’s many brands out there and honestly they don’t all taste exactly the same, but they are all thick and creamy. The difference lies in whether or not they add sugar or not, or how different the textures are. 

Dare to try coconut cream by adding it to your plant-based ice cream next time! I share two different recipes for vegan ice cream below!

4 INGREDIENT CREAMY STRAWBERRY&BANANA COCONUT ICE CREAM

For this recipe you’ll need:

4 frozen ripe bananas
6 frozen strawberries and a handful of frozen blueberries
maple syrup (optional)
1 can coconut cream

Directions:

In a high speed blender, blend 2 bananas, maple syrup and half a can of coconut cream. Pour mixture in a bowl. 
Blend remaining 2 bananas with berries and remaining can of coconut cream. Pour mixture on previous bowl.
This will create 2 different flavors that you can play around with. 
Put mixture in freezer so it hardens. Wait a few hours, or until it reaches desired consistency! You can also eat it straight out
of the blender, like I did!

4 INGREDIENT CREAMY CHOCOLATE CHIP COCONUT ICE CREAM

For this recipe you’ll need:

4 frozen ripe bananas
maple syrup (optional)
1 can coconut cream
melted dark chocolate

Directions:

In a high speed blender, blend bananas, maple syrup and coconut cream. Place mixture in a bowl, then add melted chocolate and mix with ice cream!
Put mixture in freezer so it hardens. Wait a few hours, or until it reaches desired consistency!
