Sweet Potato Ice Cream
Sweet potatoes can actually become ice cream?! Oh yes my dear, they can! And they are absolutely delicious! What’s in sweet potatoes that ice cream needs? Sugars! But the healthy kind, not the bad kind that they sell you on overrated ice cream trucks.
Sweet potatoes are called sweet for a reason, and with this recipe you’ll find out that when you set your mind to it, you can literally create ice cream out of nowhere. How about we also whip some melted chocolate on top of our rare beauty? Now we have an amazingly decadent, scrumptious dessert made literally out of VEGETABLES!

SEVEN INGREDIENTS, that’s it. That’s all it takes to make this delicious sweet potato ice cream.
I didn’t know sweet potato ice cream could taste so delicious! Sweet potatoes are one of those foods that are extremely healthy for you and are very versatile: you can have them for breakfast, lunch/dinner, and of course, for dessert.
Making ice cream can be a little bit tricky. Unless you have an ice cream maker (which I don’t), then you will need to make sure your ice cream mix stays in the freezer for long enough before it gets the frozen-but-still-creamy consistency that you want. That is usually achieved if you leave the mix in the freezer for about 5-8 hours. Or if you leave it in longer than that, then when you’re about to eat it, just thaw it for a little bit so it has the perfect consistency.

- Mix first 6 ingredients (sweet potato, almond butter, maple syrup, plant milk, vanilla extract, bananas) in high speed blender.
- Blend very well until you get smooth consistency
- Pour on big container, and freeze for 5-8 hours.
- Once you get desired consistency, scoop on your favorite bowl and pour melted chocolate sauce on top!
