Vegan Alfredo

One of my favorite foods ever has always been Chicken Alfredo. Since I stopped eating chicken and dairy altogether, I now find myself searching for and modifying recipes to be able to replace a meal that would usually be very high in fat, for one that is much more nutritious. This recipe contains nutritional yeast, which is a food that gives a cheesy flavor to the foods to which it is added. Scroll down to see the Alfredo sauce recipe!

Vegan Alfredo Sauce

Eat your favorite pasta with this delicious Alfredo sauce!

Ingredients
  1. ⅛ tsp garlic powder
  2. ⅛ tsp onion powder
  3. 12 ounces tofu, extra firm
  4. 1 cup nondairy milk
  5. ¼ tsp nutmeg
  6. ⅛ tsp salt
  7. a dash of black pepper
  8. a dash of cayenne pepper
  9. ½ cup nutritional yeast
  10. Handful of sliced mushrooms and/or broccoli (optional)
Instructions
  1. Combine tofu, plant-based milk, garlic and onion powders, nutmeg, salt, pepper, and cayenne pepper in a food processor/blender and blend until smooth and creamy.
  2. Transfer to a saucepan and whisk in nutritional yeast.
  3. Add mushrooms/broccoli.
  4. Heat sauce over slow/medium heat and allow it to thicken.
  5. Taste, adjusting seasonings.
  6. Serve with your favorite pasta!
