Whenever I go into an Asian themed restaurant I notice spring rolls usually have shrimp or tofu, so obviously I go for tofu spring rolls. However, lately I’ve gotten a bit bored of all fake meat products such as Beyond meat and even tofu. And the only fake meat that I’m able to enjoy is the meat by a company called Better Chew (not sponsored at all as they’ve never given me anything for free lol but I really like their food and wish more people could try it). They are the same people who own a vegan restaurant in Oakland, CA and make some of the most delicious sandwiches I have ever had. I don’t like the shredded steak as much when I make it at home but whenever I go to their restaurant I always have the Philly cheesesteak sandwich, which is to die for! At home, I enjoy the shredded chicken with pretty much anything, this time around, even in Spring Rolls! Scroll down for recipe. Obviously, you can use any type of fake meat you’d like.
Vegan Chicken Spring Rolls
Soft on the outside, crunchy in the inside: best spring rolls ever!
- 1 tbsp olive oil (extra virgin, optional)
- 1 tsp minced garlic
- 1 cup sliced mushrooms
- 1 bag Better Chew Chicken or any protein you'd like
- 1 box rice paper
- 1 cup julienned carrots
- 1 cup peeled cucumber, cut in lengthwise sections
- 8 oz broccoli sprouts (optional)
- 8 oz vermicelli noodles (optional)
- 1/4 cup spicy peanut sauce (optional)
If you're using vermicelli noodles, soak in hot water or boil noodles according to package instructions while you prep the other ingredients
On a non-stick pan, sauté minced garlic for a minute
Add mushrooms and cook for a few minutes until they start turning golden
Add Better Chew Chicken and cook for about 7-8 minutes, until it's no longer frozen
Prep your rice paper. In a large bowl, add hot water. Dip rice paper in it until it's soft. Once rice paper is soft, move to a flat plate in order to start adding ingredients
Start by adding a big leaf of lettuce. Proceed with adding vermicelli noodles (if you're using them). Then add Best Chew chicken mix with mushrooms, carrots, cucumber, and broccoli sprouts. Make sure they are all facing the same direction so when you make your roll, no carrots or cucumbers end up poking through the rice paper
To fold roll: fold sides inwards first, then start rolling lengthwise trying to wrap all of the ingredients inside lettuce leaf , just like a burrito but in miniature
Cut spring rolls in half. Eat with spicy peanut sauce
